Vanilla and Banana Cupcakes with Coconut Cream

Serves: 12

Ingredients

1 tin of Nature’s Charm Coconut Whipping Cream

1 medium ripe banana

1/2 cup unsalted butter

1/2 cup coconut sugar

2 large eggs

2 teaspoons vanilla essence

1/2 cup milk

1 1/4 cups wholemeal flour

1 1/4 tsp baking powder

1/4 tsp salt

 

Directions

  1. Line a muffin tin with paper cupcake liners and preheat oven to 176 degrees Celsius.
  2. Allow the butter to soften to room temperature then add into a mixing bowl with the coconut sugar. Beat using an electric mixer or food processor until mixture is thick and fluffy.
  3. Add in the eggs one at a time while beating continuously.
  4. Add in the vanilla essence, baking powder, salt and half the flour. Beat on the lowest speed.
  5. Add in the second half of the flour and milk then continue to beat on the lowest level speed until the mixture becomes a well combined batter.
  6. Serve out the mixture evenly into each of the cupcake liners.
  7. Bake for 20-22 minutes of until cupcakes are golden brown, and a fork comes out clean.
  8. Remove cupcakes from the oven and place onto a wire rack to allow to cool.
  9. Spread the Nature’s Charm Coconut Whipping Cream on top then add a slice of banana.
  10. Enjoy!
