Feed Your Future Dietetics’ Omelette Muffins

 

Makes 12 muffins.

 

 

Ingredients

 

3 tablespoons low fat milk

30 mls extra-virgin olive oil 1 1/2 cups low fat cheddar cheese

9 eggs

1 cup of sliced English spinach

1 diced tomato

4 sliced button mushrooms

3 tablespoons chopped parsley

Pepper and to taste

Method ⠀⠀⠀⠀⠀⠀⠀⠀⠀

 

  1. Preheat your oven to 350 F.
  2. Place silicone liners to a 12-hole muffin tray.
  3. Sautee at medium heat the sliced spinach, tomato and button mushrooms with 30mls of extra virgin olive oil.
  4. In a mixing bowl and using a fork whisk the 9 eggs and low-fat milk.
  5. Combine the remaining ingredients into the mixing bowl. ⠀⠀⠀⠀⠀
  6. Pour the mixture into each of the silicone holes, filling to the top.
  7. Place tray into the over for approximately 30min, check at 20 minutes as different ovens have different efficiency levels.
  8. Allow the omelettes cool for a few minutes. Enjoy!
