Coffee Selectors, date, chia, peanut butter balls

(serves 10)

Ingredients

  1. 20g of Coffee Selectors Rumble Coffee Shadow Boxer Espresso Blend a Gold Medal Winner in the Home Baristas Awarded Collection! It has toffee, dark chocolate and raspberry notes.
  2. 3 tablespoons (60g) of 100% peanut butter
  3. 1 tablespoon of chia seeds
  4. 2/3rd of a cup (65g) of rolled oats
  5. 4 pitted dates
  6. 3 tablespoons of honey

 

 

Directions

  1. Grind 20g of Coffee Selectors Rumble Coffee Shadow Boxer Coffee Espresso Blend then use your coffee machine to create two 60g shots of espresso.
  2. Set aside the 60ml (2 shots) of espresso coffee made from Coffee Selectors Rumble Coffee Shadow Boxer Espresso Blend.
  3. Blend the dates until they are in small pieces and can be made into a ball shape.
  4. Mix in the chia seeds, peanut butter, honey, oats, and espresso shots. Mix by pulsing in the blender until mixture combined well. Keep small chunks as too much blending will make it difficult to for balls.
  5. Roll the mixture into 30g balls (or your preferred size). Making balls around this size should give you around 10 balls.
  6. Place the balls on a tray and put into fridge to set for around 20 minutes.
  7. Enjoy!
