Makes 12 muffins.
Ingredients
3 tablespoons low fat milk
30 mls extra-virgin olive oil 1 1/2 cups low fat cheddar cheese
9 eggs
1 cup of sliced English spinach
1 diced tomato
4 sliced button mushrooms
3 tablespoons chopped parsley
Pepper and to taste

Method ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Preheat your oven to 350 F.
- Place silicone liners to a 12-hole muffin tray.
- Sautee at medium heat the sliced spinach, tomato and button mushrooms with 30mls of extra virgin olive oil.
- In a mixing bowl and using a fork whisk the 9 eggs and low-fat milk.
- Combine the remaining ingredients into the mixing bowl. ⠀⠀⠀⠀⠀
- Pour the mixture into each of the silicone holes, filling to the top.
- Place tray into the over for approximately 30min, check at 20 minutes as different ovens have different efficiency levels.
- Allow the omelettes cool for a few minutes. Enjoy!
